Italian Chicken Cacciatore - The Best Chicken Cacciatore Recipe
This easy chicken cacciatore is a great easy dinner idea.
Italian chicken cacciatore can be eaten simply with a side of rustic bread, or serve it over pasta for a more substantial dinner. Either way, it's delicious!

Ingredients
1 pound chicken pieces 1 tablespoon olive oil 1 large onion, chopped 8 ounces mushrooms, cleaned and sliced 2 garlic cloves, minced 1/2 cup chicken broth, divided 1 tablespoon white flour 1/2 cup dry sherry or white wine 1 14 oz canned tomatoes, drained and chopped 1 large green bell pepper, seeded/cut in strips 1/2 teaspoon dried oregano 1/2teaspoon dried basil 1/2 teaspoon dried thyme Salt and pepper 1 pack (8 oz) spaghetti, cooked as directed 2 teaspoons Parmesan cheese, per serving
Method:
Season chicken with salt and pepper.
Spray a Dutch oven similar large, heavy pot with oil.
Cook chicken pieces over medium heat, turning frequently, until they begin to brown.
With a slotted spoon, remove chicken to a bowl and set aside.
Add oil, onions, green pepper, mushrooms and garlic to the pot. Cook over medium heat, stirring frequently for 5 or 6 minutes or until onion is tender.
Deglaze the pot by adding 3 tablespoons of broth. Scrape up any browned bits from bottom of the pot.
Add flour and cook into a smooth paste.
Stir in remaining chicken broth and sherry or wine and stir until mixture thickens slightly.
Add tomatoes, oregano, basil, and thyme.
Return chicken to pot. Cover and simmer 30 mins to allow flavors to develop.
Taste sauce and add additional salt and pepper to taste.
Serve individual portions of chicken and sauce over pasta. Top with Parmesan cheese. ENJOY!!!
