The following seafood and fish recipes are some of my family's favorites. They are quick, easy, good for you and delicious! Enjoy.
Marinated Roasted Salmon with Lentils and Spinach
Ingredients 4 fillet of salmon 2 tablespoons Dijon mustard 3 tablespoons good soy sauce 1 tsp minced garlic 1 cup lentils 3 cups water 4 scallions (green onions), chopped 2 tsp cumin (or more according to your taste) Bunch baby spinach, enough for 4 servings
Method Preheat oven to 425 degrees Wash and drain lentils Boil lentils and chopped scallions in medium pot of water. Season with cumin, salt and pepper, and stir. Let lentils cook for 20 minutes, stirring frequently
Meanwhile, make the marinade for the salmon. In a small bowl, add the Dijon mustard, minced garlic and soy sauce. Pour the marinade over the salmon and let sit for 10 minutes Place the salmon on a foiled baking sheet and place in the oven for 10 – 12 minutes (depending on the thickness of the salmon pieces). Remove from the oven
Add a serving of lentils to each plate Top with a bunch of spinach, Place roasted salmon on top of spinach
The heat from the lentils and salmon will slightly wilt the spinach.
