Yes, you can eat well on a budget with this collection of low cost recipes


All the frugal recipes listed here are low cost recipes. They're also quick easy recipes that are prefect if you want to eat well on a budget.

I have not added a price to the meals, but the ingredients are generally inexpensive. You probably already have many of the ingredients in your pantry, making them not only frugal recipes but quick and easy recipes.

Living in Bermuda, where almost everything is imported, the price of food is very high. These recipes are pretty inexpensive, even for Bermudian terms.

I hope you enjoy the selection below. As this website grows, I plan to add more recipes to the list below, so please come back for a visit every now and then to see what's new.



Corned Beef and Onions

This corned beef and onions recipe was a favorite in my house growing up. I have very fond memories of my dad cooking this in our kitchen when I was a child. It was one of his go to meals whenever he was looking after us when my mom was out at a function. It was also one of the last meals I cooked for him before he passed away. So it has even more sentimental meaning to me. I still love to prepare this for my family now, and always have a can of corned beef and a couple of onions in my pantry as staple items ready to go.

SERVINGS
4 servings

Ingredients
1 tsp. olive oil
1 12 oz can corned beef
1. onion, sliced
1 cup white rice
1 can baked beans

Method
Cook rice according to package instructions. It usually takes 20 minutes.
Heat baked beans in a saucepan. My friend Carolyn suggests adding a little pancake syrup and a dash of mustard to the beans...yummy!

While the rice is cooking, heat oil in a saucepan
Sauté the onion in the oil until softened (a few minutes)
Season with a little salt and pepper
Add corned beef, breaking it into smaller pieces with a fork
Continue to cook the corned beef with the onions, stirring frequently until the corned beef becomes somewhat crispy

Serve corned beef and onions over cooked rice with beans on the side.
