Corned Beef and Onions
This corned beef and onions recipe was a favorite in my house growing up. I have very fond memories of my dad cooking this in our kitchen when I was a child. It was one of his go to meals whenever he was looking after us when my mom was out at a function. It was also one of the last meals I cooked for him before he passed away. So it has even more sentimental meaning to me. I still love to prepare this for my family now, and always have a can of corned beef and a couple of onions in my pantry as staple items ready to go.
SERVINGS 4 servings
Ingredients 1 tsp. olive oil 1 12 oz can corned beef 1. onion, sliced 1 cup white rice 1 can baked beans
Method Cook rice according to package instructions. It usually takes 20 minutes. Heat baked beans in a saucepan. My friend Carolyn suggests adding a little pancake syrup and a dash of mustard to the beans...yummy!
While the rice is cooking, heat oil in a saucepan Sauté the onion in the oil until softened (a few minutes) Season with a little salt and pepper Add corned beef, breaking it into smaller pieces with a fork Continue to cook the corned beef with the onions, stirring frequently until the corned beef becomes somewhat crispy
Serve corned beef and onions over cooked rice with beans on the side.
