Easy Pasta Recipe for a Quick Easy Dinner Tonight or Any Night


Pasta Amatriciana Pasta Amatriciana: Looking for family meal ideas? This Easy Pasta recipe is great for a quick easy dinner any night of the week.

This pasta amatriciana recipe was inspired from a little and very popular Italian restaurant in Bermuda called Portofino. I guess that there is a Portofino restaurant in about every town, and ours is a special place that is always bustling with activity.

I use to eat lunch there every day with my coworkers when I was working at the Bank of Bermuda, so much so that we had a table in the back next to the kitchen reserved for us each day! And along with the fabulous focaccia bread for the table, I had this pasta dish almost every time.

I loved it so much that I had to figure out how to make it for myself. I hope you will try it and enjoy it as much as I did and still do!


Pasta Amatriciana: Bacon & Onion Pasta in Spicy Tomato Sauce

20 minutes
Serves 4

Ingredients
1 tbs olive oil 4 – 6 strips of centre cut bacon (turkey bacon also works, to cut calories)
1 large yellow onion, thinly sliced
2 cloves of garlic (or 1 tbs mined garlic)
Pinch of crushed red pepper flakes (more if you like it hot!)
Dry white wine (wine that you would drink, not cooking wine)
24 oz crushed tomatoes, (or diced tomatoes pureed in a blender)
1 tsp honey or sugar
6 oz long pasta (e.g. linguini, spaghetti)
Salt & Pepper

Method

  • In a large pot, boil water. When water has come to a boil, add a generous amount of salt.
  • Add pasta to boiling salted water, cook according to package instructions
  • Meanwhile, heat oil in a saucepan over medium-high heat
  • Sauté onions until soft, about 3-5 minutes
  • Season onions with salt and pepper
  • Add crushed red pepper flakes
  • Add garlic, then bacon, sauté until bacon is crisp
  • Deglaze pan with white wine, 2 turns around the pan. Cook for a minute or two to let alcohol in the wine cook off
  • Add crushed tomatoes
  • Bring sauce to a slight boil, turn down heat and simmer
  • Add honey or sugar and stir
  • Season again with salt and pepper to taste
  • Remove sauce from the heat
  • Drain pasta and add pasta to the sauce, stir with tongs to make sure that pasta is covered by the sauce.

Serve immediately. Goes nicely with a simple green salad and crusty bread.
