This smoked salmon pasta is one of my family's favorites. If you're looking for quick easy dinner ideas and like pasta with vodka sauce, this one's a winner!
Easy Pasta Recipe in Under 30 Minutes
20 minutes Serves 4
Ingredients
1 tbs olive oil
4 oz smoked salmon
1 large shallot, minced
8 oz light cream or half-and-half
Grated Parmesan cheese
Shot of vodka (optional. Although the alcohol will burn off only leaving an added depth of flavor)
Baby spinach (optional)
8 oz pasta (any shape)
Salt & Pepper
Method
In a large pot boil water. When water has come to a boil add a generous amount of salt.
Add pasta to boiling salted water, cook according to package instructions
Meanwhile, heat oil in a saucepan over medium-high heat
Sauté shallots until soft, about 3-5 minutes
Season shallots with salt and pepper
Deglaze pan with shot of vodka. Cook for a minute or two to let alcohol in vodka burn off
Add cream or half and half and stir
Break up smoked salmon with hands and add to pan
Allow sauce to come to a slight boil, turn down heat and simmer
Add Parmesan cheese. This will thicken the sauce
Add baby spinach leaves
Remove from the heat
Drain pasta and add to the sauce, stir with tongs making sure that the pasta is covered by the sauce.
