Vegetarian Dinner Recipes: Maharagwe (beans in Kiswahili)
Vegetarian dinner recipes are popular in Kenyan cuisine. I got this recipe from a Kenyan friend and when I shared my first attempt with her, she said it was really close to the original and made her miss home.
Time: 20 minutes Serves: 6
Ingredients 2 tbs olive oil 2 bell pepper (any color), chopped 1 medium onion, chopped 2 15oz red kidney beans, rinsed and drained 1 15oz can chopped tomatoes, drained 4 cloves garlic, or 2 ½ tbs minced garlic 1 jalapeno pepper, seeded and minced ¼ tsp ground cumin ¼ tsp ground cardamom 1 tsp curry powder ¼ tsp turmeric ½ cup cilantro, chopped 2 tsp honey ¼ tsp black pepper
Method
Heat oil in a large pot over medium high heat, sauté onions and peppers until soft
Add garlic, jalapeno pepper, cumin, cardamom, curry power and turmeric. Cook for one minute, stirring to make sure garlic doesn’t burn
Add kidney beans, coconut milk, tomatoes
Bring to a boil, reduce heat to a simmer and cover
Cook for 10-15 minutes to allow the flavors to make friends with each other, stirring occasionally
Stir in chopped cilantro, honey, and season with salt and pepper to taste
Serve hot by itself or with steamed rice.
TIP!
This dish freezes well. So make the whole batch, even if you're cooking for one. Freeze the rest in individual servings containers, like ziploc containers and enjoy for later!
